CHEF JEFF — ONE BYTE AT A TIME: Mixed Herb Angel Hair Pasta

This dish takes only a minute to cook and will pair well with a number of foods.

Mixed Herb Angel Hair Pasta

¼ pound fresh angel hair pasta

2 teaspoons olive oil

2 teaspoons balsamic vinegar

1 cup chopped fresh basil

½ cup snipped fresh chives

Salt and freshly ground black pepper

Fill large saucepan with water and bring to a boil. Add pasta and stir. Boil 1 minute. (If using dried angel hair pasta, boil 3 to 4 minutes.) Drain. Place in bowl or back in saucepan and add oil and balsamic vinegar. Toss well. Add basil, chives and salt and pepper to taste. Toss again.

Yield: Serves 2.

Approximate nutritional analysis per serving: 259 calories, 19 percent of calories from fat, 5.5 grams fat (0.8 grams saturated, 3.5 grams monounsaturated), no cholesterol, 8.2 grams protein, 43.4 grams carbohydrates, 2.4 grams fiber, 4 milligrams sodium.
