Homemade goodies such as this can spice up a holiday celebration.

Microwave Toffee

¾ cup sugar

½ cup each: whipping cream, light corn syrup

¾ cup roasted cashews

1/3 cup each: walnuts, roasted hazelnuts

1 tablespoon each: butter, vanilla

Mix sugar, cream and syrup in a microwave-safe bowl. Microwave on high to hard-cooked stage, 10 to 12 minutes. (Test by pouring a drop of the candy in cold water; it’s ready when you can roll the drop into a hard marble.) Stir in nuts, butter and vanilla. Spread on a parchment paper-lined baking sheet. Allow to harden. Break into pieces. Store in refrigerator.

Yield: Serves 16.
