30-Second Chocolate Cake
4 ounces bittersweet chocolate, chopped
4 large eggs
6 tablespoons sugar
3 tablespoons flour
Melt the chocolate in a microwave-safe bowl. Let cool. Whisk in eggs, sugar and flour until smooth. Pass the mixture through a strainer.
Transfer to a whipper; pressurize. Spray mixture into a greased, microwave-safe ramekin, leaving at least the top third of the container empty. Microwave until the foam has set, about 30 seconds. Flip onto a plate; dust with confectioners’ sugar.
Yield: Serves 4.
Approximate nutritional analysis per serving: 302 calories, 46 percent of calories from fat, 17 grams fat (8 grams saturated), 212 milligrams cholesterol, 37 grams carbohydrates, 9 grams protein, 70 milligrams sodium, 2 grams fiber.
