Consider other vegetables for this popular holiday salad that usually contains cabbage.

Broccoli Slaw

1 16-ounce bag broccoli slaw or 1 large bunch broccoli (about 1½ pounds), shredded

¼ cup thinly sliced almonds, toasted

¼ cup dried cranberries

¼ cup chopped sweet red onion

1 tablespoon cider vinegar

½ cup buttermilk salad dressing, or to taste

Freshly ground pepper to taste

Toss broccoli with almonds, cranberries and onion in a large bowl. Sprinkle on the vinegar and toss again. Add the dressing and pepper, and toss well.

Yield: Serves 8.

Approximate nutritional analysis per serving: 52 calories, 40 percent of calories from fat, 2.5 grams fat (no saturated, 1.5 grams monounsaturated), no cholesterol, 3 grams protein, 5.5 grams carbohydrates, 1 gram fiber, 33 milligrams sodium.
