Here’s another winning recipe in the St. Louis Post-Dispatch’s Tried and True Recipe Contest.
Soda Pop Bundt Cake
1½ cups butter
3 cups granulated sugar
5 eggs
3 cups all-purpose flour
2 tablespoons lemon extract
12 ounces lemon-lime or other citrus soda, regular or sweetened with aspartame
Preheat oven to 325 degrees. Grease and flour 12-cup bundt pan. In mixing bowl, beat butter and sugar together with mixer. Add eggs 1 at a time, beating well after each addition. Add flour. Mix well. Stir in lemon extract and soda, mixing until smooth. Pour into pan. Bake for 60 to 90 minutes or until toothpick inserted into cake comes out clean.
Note: Because it acts as leavening, soda must be fresh and fully carbonated.
Yield: Serves 18.
