This recipe from computer scientist Jeff Potter’s new book takes a different approach to an old favorite.
‘Cooking for Geeks’ Mashed Potatoes
3 to 4 medium red potatoes
½ cup sour cream
1/3 cup milk
4 teaspoons butter
2 teaspoons finely chopped fresh rosemary (optional)
¼ teaspoon salt
¼ teaspoon ground pepper
Microwave the potatoes until cooked, about 6 minutes. After cooking, cut the potatoes into small pieces that can be mashed with the back of a fork. Add and mash together the sour cream, milk, butter, rosemary, salt and pepper.
Yield: Serves 4.
Approximate nutritional analysis per serving: 199 calories, 42 percent of calories from fat, 9.5 grams fat (5.6 grams saturated, 2.4 grams monounsaturated), 24.5 milligrams cholesterol, 4 grams protein, 25.8 grams carbohydrates, 2.8 grams fiber, 20 milligrams sodium.
