Wilma Elsinga’s Kale-Potato Casserole
6 red potatoes, quartered
1 cup kale, chopped
½ cup chicken broth
1 ring smoked sausage
Place potatoes in bottom of a large pan. Cover with chicken broth. Chop kale and put on top of potatoes. Place smoked sausage on top of the potatoes and kale, carefully piercing its skin. Cook until potatoes are done. Drain liquid, reserving some broth to mash the potato/kale mixture.
Slice the sausage and mix with potato/kale mixture and serve.
Note: Sausage can be served on the side.
