Put tart, home-grown apples to use in this tasty dish.

Sausage, Beer and Potato Stew

¾ pound low-fat, mild turkey sausage

3 cups cubed sweet potato

½ medium onion, sliced

1 medium green pepper sliced

1 tart apple, sliced

2 large tomatoes, sliced

12 ounces beer

1 teaspoon dried thyme

Salt and freshly ground black pepper

2 slices multigrain bread

Preheat oven to 350 degrees. Cut sausages into 2-inch pieces. Peel sweet potato. Cut into 1-inch pieces. Saute sausage, potato, onion and green pepper in 3-quart nonstick saucepan over medium-high heat for 5 minutes. Add apple, tomatoes, beer and thyme. Bring to simmer. Cover. Simmer, gently 15 minutes. Add salt and pepper to taste. As stew simmers, warm bread in oven.

Yield: Serves 2.

Approximate nutritional analysis per serving: 694 calories, 16 grams fat, 126 milligrams cholesterol, 43 grams protein, 86 grams carbohydrates, 15.1 grams fiber, 1236 milligrams sodium.
