Baked fish recipes, such as this one from reader Doug Herzog, are always healthier than deep-fried ones.
Baked Walleye
1½ pounds of walleye fillets (or fish of your choice)
¼ cup margarine (see note)
½ teaspoon salt
¼ teaspoon pepper (use red pepper if you like more heat)
1 tablespoon lemon juice
1 tablespoon white wine
3 tablespoons Parmesan cheese
1/8 teaspoon paprika
Heat oven to 450 degrees. Cut fillets into serving-sized pieces. Place margarine in a 13-inch-by-9-inch baking pan. Place pan in oven for 5 minutes to melt margarine. Place fish in pan, skin side up. Sprinkle with salt and pepper. Bake 5 minutes. Flip fillets. Sprinkle with white wine, Parmesan cheese and paprika. Bake until fish flakes, about 5 minutes.
Note: For a little more flavor, use slightly less margarine and a little butter. Don’t use all butter because it tends to burn.
