Wafer cookies form the base for this tasty dessert.

Mocha Tartlets

1 cup heavy cream

2 tablespoons sugar

2 teaspoons instant espresso powder

1 teaspoon vanilla extract

32 Nabisco Famous Chocolate Wafers cookies

In medium bowl, whip heavy cream, sugar, espresso powder and vanilla with electric mixer until stiff peaks. Place 1 wafer cookie in each of 8 foil muffin cups (papers removed). Top each with 1 tablespoon whipped cream. Repeat three more times, gently pressing cookie into whipped cream. Sprinkle final dollop of whipped cream with a little shaved or grated bittersweet or semisweet chocolate. Refrigerate until cookies soften, 3 to 4 hours. Serve.

Yield: Serves 8.

Approximate nutritional analysis per serving: 229 calories, 14 grams fat (8 grams saturated), 45 milligrams cholesterol, 23 grams carbohydrates, 2 grams protein, 196 milligrams sodium, 1 gram fiber.
