Holidays parties are just around the corner. Here’s a twist on a favorite appetizer.

Scandinavian Shrimp Cocktail

½ cup sour cream

¼ teaspoon freshly grated lemon zest

2 tablespoons lemon juice

2 teaspoons sugar

2 tablespoons chopped dill

¼ teaspoon salt

1 teaspoon freshly ground pepper

1 pound cooked, shelled and deveined shrimp

1 English (seedless) cucumber, very thinly sliced

Thin lemon slices and mint leaves for garnish

Whisk sour cream with lemon zest. Add juice, sugar, dill, salt and pepper. Layer shrimp, cucumber and sour cream mixture into 6 cocktail glasses. Garnish with lemon slices, mint leaves.

Yield: Serves 6.

Approximate nutritional analysis per serving: 126 calories, 4.5 grams fat, 123 milligrams cholesterol, 16.1 grams protein, 5 grams carbohydrates, 0.4 grams fiber, 223 milligrams sodium.
