Have you ever made a scone on a griddle?
Potato Tatties
1 cup flour
½ teaspoon baking soda
½ teaspoon salt
1 cup warm, coarsely mashed potatoes
1 egg, beaten
About ¼ cup milk
2 tablespoons melted butter
Heat oven to 375 degrees. Measure flour, baking soda and salt into large bowl. Whisk to incorporate. Stir in potatoes, egg and just enough milk to form sticky dough. Roll dough ½-inch thick on floured surface. Use saucer to cut 3 rounds from dough. Score each round into quarters, cutting not quite all way through. Grease baking sheet with butter. Bake scones about 15 minutes, until golden brown. Or brush butter onto griddle and cook scones over medium heat for about 7 minutes on each side, until golden.
Yield: 12 scones.
Approximate nutritional analysis per scone: 78 calories, 2.9 grams fat (1.5 grams saturated), 23 milligrams cholesterol, 2 grams protein, 10.8 grams carbohydrates, 0.5 grams fiber, 205 milligram sodium.
