Try this variation of a very popular restaurant appetizer.

Sweet Potato Fries

4 sweet potatoes, peeled, cut into wedges

2 tablespoons olive oil

½ teaspoon salt

Ground red pepper

Heat oven to 375 degrees. Toss potatoes in olive oil in a large bowl. Bake on cookie sheet until crispy on one side, about 10 minutes; turn. Bake until they are crispy and tender, about 10 minutes. Sprinkle with salt and red pepper to taste.

Yield: Serves 6.

Approximate nutrition analysis per serving: 116 calories, 35 percent of calories from fat, 5 grams fat (1 gram saturated), no cholesterol, 18 grams carbohydrates, 1 gram protein, 221 milligrams sodium, 3 grams fiber.
