Muffin Tin Meat Loaves
1½ pounds lean ground beef
1 egg, slightly beaten
1½ cups shredded zucchini
1 teaspoon dried Italian seasoning
½ tablespoon salt
1 cup bread crumbs
¼ cup ketchup
Preheat oven to 400 degrees.
In a large bowl, combine all ingredients except ketchup, mixing lightly but thoroughly. Place about Zc cup beef mixture into each of 12 medium muffin cups, pressing lightly; spread ketchup over tops.
Bake 20 minutes, or until no pink remains and juices run clear.
Yield: 12 muffins.
Approximate nutritional analysis per muffin: 145 calories, 43 percent calories from fat, 7 grams fat (3 grams saturated), 50 milligrams cholesterol, 8 grams carbohydrates, 12 grams protein, 459 milligrams sodium, 1 gram fiber.
