Fancy Fast Chicken
6 bone-in chicken breast halves, skinned (see note)
6 1-ounce slices Swiss cheese
¼ pound fresh mushrooms, sliced, optional
1 can condensed cream of chicken soup
½ cup dry white wine
2 cups dry herb-seasoned stuffing mix
1 stick butter, melted
Preheat oven to 350 degrees. Lightly grease a 9-by-13-inch baking pan.
Place chicken in pan and top each piece with a slice of Swiss cheese. Arrange sliced mushrooms over cheese, if desired.
In a small bowl, combine soup and wine; pour over chicken. Sprinkle with stuffing mix then drizzle with melted butter.
Bake 50 to 60 minutes, or until chicken is done.
Yield: Serves 6.
Note: If you’d rather use boneless and skinless chicken breast halves, only bake this 45 to 50 minutes, or until cooked through.
