Add a little balance to snacking with this healthy recipe.
Sour Cream-Onion Dip
1½ cups plain fat-free yogurt
2 tablespoons olive oil
2 medium yellow onions, finely chopped
¼ teaspoon sugar
1/3 cup reduced-fat sour cream
Snipped chives for garnish
Line medium sieve with a coffee filter or paper towels. Set it over deep bowl. Add yogurt. Refrigerate 30 minutes. Discard liquid in bowl. Heat oil on medium in large skillet. Add onions. Sprinkle with sugar, salt and pepper. Cook until dark golden brown, stirring occasionally. Line plate with double thickness of paper towels. With slotted spoon, transfer onions to plate to cool. (Onions will crisp slightly.) In medium bowl, mix sour cream, strained yogurt and onions. Cover and refrigerate at least 1 hour. (Dip is best after sitting for a day.) Garnish with chives.
Yield: About 2 cups.
