In conjunction with Oktoberfest, which started Sept. 18, the National Hot Dog & Sausage Council offers this low-calorie recipe.
Kielbasa with Apples and Red Cabbage
1 teaspoon canola oil
14 to 16 ounces fully-cooked turkey kielbasa, sliced on the diagonal into ½-inch circles
½ cup chopped red onions
4 cups or 1 8-ounce package shredded red cabbage
1 cup apple juice
1 tablespoon honey mustard
1 tablespoon brown sugar
½ teaspoon dried thyme
2 medium tart red apples, cored and chopped
2 cups hot cooked rice
In large, heavy nonstick skillet, heat oil over medium heat. Add sausage. Saute until light brown, stirring occasionally. Add onions. Cook 1 to 2 minutes. Stir in all remaining ingredients, except apples. Mix well. Gently stir in apples. Reduce heat, cover and gently simmer until apples are crisp tender and sausage is hot throughout. Serve over hot rice in shallow soup/pasta bowls.
Yield: Serves 5 as entree.
