A lot of kids don’t care for vegetables, but here’s a suggestion for serving one of those that might change their minds.
Party Peas
1-pound bag frozen peas
½ cup (1 stick) butter or margarine
1 large onion, chopped
1 4-ounce jar chopped pimientos
1 10-ounce can cream of mushroom soup
¾ cup seasoned croutons
Heat oven to 350 degrees. Place peas in 1½-quart casserole. In large skillet, saute onion in butter over medium-high heat until soft. Add undrained pimiento and soup. Mix well and pour over peas. Top with croutons. Bake 25 minutes.
Yield: Serves 10.
Approximate nutritional analysis per serving: 160 calories, 63 percent of calories from fat, 11.4 grams fat (6.3 grams saturated), 24.4 milligrams cholesterol, 3.4 grams protein, 12 grams carbohydrates, 2.8 grams fiber, 317 milligrams sodium.
