Home-grown tomatoes can be used for more than just snacking, salads or BLT sandwiches.

Home-grown tomatoes can be used for more than just snacking, salads or BLT sandwiches.

Tomato Pie

2 to 3 large tomatoes peeled and sliced thickly

1 9-inch pie shell, baked and cooled

1 tablespoon chopped fresh chives (1 teaspoon dried)

1 tablespoon chopped fresh basil (1 teaspoon dried)

2/3 to 1 cup mayonnaise

1 cup grated cheese, whatever is your favorite

Salt and pepper

Preheat oven to 350 degrees. Layer tomato slices in pie shell, topping each layer with salt and pepper, basil and chives.

Combine mayo and cheese and spread (like icing) over top layer of tomatoes. Bake 30 minutes.
