It won’t be long before fresh cucumbers will be available in gardens or farmers markets so you can make this creamy homemade salad dressing.

It won’t be long before fresh cucumbers will be available in gardens or farmers markets so you can make this creamy homemade salad dressing.

Creamy Cucumber Salad Dressing

½ cup mayonnaise

½ cup sour cream

2 tablespoons fresh chives or green onion

1 cucumber, peeled

1 tablespoon milk

1 teaspoon fresh dill

Salt and freshly ground pepper to taste

Finely chop chives or green onion. Peel and seed cucumber. Finely chop cucumber to measure ¾ cup. Whisk mayonnaise, sour cream and chives or onion. Add chopped cucumber. Stir in milk as needed to thin mixture. Add dill and salt and pepper to taste. Chill for several hours or overnight before serving.
