DAIRY RECIPES: Orange Cream Chiller . . . Peanut Butter Banana Crunch Yogurt Parfait

Orange Cream Chiller

3 ounces orange juice concentrate

1 cup low-fat milk

½ cup nonfat Greek-style plain yogurt

1 small frozen banana or 3 frozen strawberries

1 teaspoon honey

½ teaspoon vanilla extract

Place all ingredients in a blender. Blend until smooth. Serve immediately or store in refrigerator.

Yield: Serves 2.

Approximate nutritional analysis per serving: 214 calories, 2 grams fat (1 gram saturated), 5 milligrams cholesterol, 95 milligrams sodium, 40 grams carbohydrates, 2 grams dietary fiber, 11 grams protein, 25 percent daily value calcium.

Peanut Butter Banana Crunch Yogurt Parfait

1 cup nonfat light vanilla yogurt

1 tablespoon creamy peanut butter

1 tablespoon chopped walnuts

4 pretzel twists, crumbled (about 1 tablespoon)

1 small banana, sliced

In a small bowl, mix yogurt and peanut butter together. In a separate bowl, toss walnuts and pretzels together.

In a tall glass, begin to build parfait: Layer ½ cup yogurt, half of banana slices and 1 tablespoon of walnut/pretzel mixture. Repeat layers. Serve immediately.

Yield: Serves 1.

Approximate nutritional analysis per serving: 390 calories, 14 grams fat (3 grams saturated), 4 milligrams cholesterol, 397 milligrams sodium, 55 milligrams carbohydrates, 4 grams dietary fiber, 16 grams protein, 34 percent daily value calcium.
