CHEF JEFF — ONE BYTE AT A TIME: Persian Green Sauce

Kebabs and sandwiches are popular this time of year, and so are the sauces that go with them.

Persian Green Sauce

1 bunch cilantro

2 large garlic cloves

1 8-ounce container plain yogurt or sour cream

1 jalapeno pepper (optional)

Juice of 1 to 2 limes, to taste

½ teaspoon kosher salt, or to taste

1 teaspoon sugar or honey, or to taste

Coarsely chop cilantro, including stems if they are not woody. Smash garlic with flat side of knife and chop coarsely. Split jalapeno. Remove seeds. Place in food processor or blender with yogurt and juice of 1 lime. Pulse until cilantro is reduced to flecks. Taste for seasoning and add more lime juice, salt and/or honey if desired.

Yield: Serves 12 2-tablespoon servings.

Approximate nutritional analysis per serving: 16 calories, no fat, no cholesterol, 1.3 grams protein, 2.6 grams carbohydrates, 0.3 grams fiber, 115.4 milligrams sodium.
