Sauteed Fresh Corn With Herbs
8 to 10 ears of corn
3 tablespoons unsalted butter
¾ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ teaspoon fresh thyme
Remove the husks and silk from the corn. Cut the kernels off the corn carefully, making sure to not remove any of the husk. Heat the butter over medium heat in a large skillet. Saute the corn with the salt, pepper and thyme for about 10 minutes, until nice and brown.
Yield: Servings 8.
Approximate nutritional analysis per serving: 96 calories, 17 grams carbohydrates, 2 grams fiber, 3 grams sugars, 3 grams fat (2 grams saturated, no trans), 232 milligrams sodium, 3 grams protein.
