Here’s a burger recipe from Elizabeth Edelman of www.DiabetesDaily.com that might go well at a Fourth of July gathering.
Stuffed Hamburgers
1 pound ground sirloin
1 egg, lightly beaten
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
6 ounces whipped cream cheese
4 jalapeno peppers, seeded and chopped
Lettuce, for wrapping
Heat grill over medium heat. While grill is heating, combine cream cheese and chopped jalapenos in bowl and stir to combine. Set aside. In large bowl, combine ground sirloin, egg, kosher salt and black pepper. Form 8 ¼-inch-thick patties. Spoon cream cheese and jalapeno mixture onto half of patties. Place other patties on top of cream cheese and press to seal them shut. Grill burgers over medium heat, for about 6 to 10 minutes per side, or until cooked to desired temperature. When burgers are done, remove from grill and wrap in lettuce leaves.
Yield: Serves 4.
