CHEF JEFF — ONE BYTE AT A TIME: La Estancia Argentina Chimichurri

You can bet many Argentines are celebrating their country’s two World Cup soccer victories in South Africa with a sauce like the following on some grilled meat.

La Estancia Argentina Chimichurri

1 tablespoon diced fresh garlic

1 cup chopped fresh Italian parsley

1 teaspoon salt

½ teaspoon black pepper

¾ cup white vinegar

¾ cup vegetable oil

1 bay leaf

Mix all ingredients together in a small bowl. Remove bay leaf before serving.

Yield: About 1¾ cups.

Note: Chimichurri will keep in the refrigerator for 2 weeks.

Approximate nutritional analysis per 1 tablespoon serving: 51 calories, 98 percent calories from fat, 6 grams fat (trace saturated), no cholesterol, no carbohydrates, no fiber, no sugars, 40 milligrams sodium.
