Dress up a baked sweet potato with a praline topping.

Sweet Potato Puff

3 medium sweet potatoes

½ cup milk

½ cup sugar

2 eggs

1/3 cup butter or margarine, melted

¼ teaspoon nutmeg

½ teaspoon cinnamon

PRALINE TOPPING:

½ cup brown sugar, packed

½ cup chopped pecans

2 tablespoons butter or margarine, melted

¼ cup flour

Bake or microwave sweet potatoes until tender. Remove pulp. Beat for 2 minutes with electric mixer. Cool at room temperature. Add rest of ingredients. Beat to combine. Coat 9-inch pie plate with vegetable oil spray and spread sweet potato mixture evenly. Bake 20 minutes at 400 degrees or until set. Spread topping over hot sweet potatoes. Bake an additional 10 minutes. Serve.

Yield: Serves 8.

Approximate nutritional analysis per serving: 318 calories, 16.5 grams fat, 80 milligrams cholesterol, 4 grams protein, 40.6 grams carbohydrates, 2.3 grams fiber, 123.8 milligrams sodium.
