Weight Watchers Taco Soup
1 pound lean ground meat
1 large onion, diced
16-ounce can tomato sauce
16-ounce can kidney beans (rinsed)
16-ounce can pinto beans (rinsed)
16-ounce can beans (rinsed)
16-ounce can yellow corn (undrained)
16-ounce can diced tomatoes
1 3-ounce can of diced green chilies
1 packet of dry ranch dressing
1 packet of taco seasoning mix
1½ cups water
Brown meat with onion. Add remaining ingredients. Heat to boiling. Immediately lower heat to simmer for 30 minutes. Garnish with cilantro.
Judy’s Taco Soup
2 pounds hamburger
1 large onion, chopped
1 large can Hormel chili without beans
2 cans diced stewed tomatoes
1 pound Velveeta cheese
1 can Rotel (diced tomatoes and chilies)
1 can pinto beans, undrained
1 16-ounce container sour cream
1 bag Frito corn chips
Brown meat and onions. Add remaining ingredients and place in slow cooker on high until all cheese is melted. Add sour cream 15 minutes before serving.
Serve over corn chips in soup bowl.
