CHEF JEFF — ONE BYTE AT A TIME: Pasta-Salmon Salad

Summer is the perfect time for cold pasta salads such as this one that contains salmon.

Pasta-Salmon Salad

1 cup seashell pasta

1 cup fresh or frozen peas

¼ cup low-fat cottage cheese

¼ cup plain yogurt

1 tablespoon lemon juice

¼ cup chopped fresh dill

2 6-ounce cans salmon, drained

Freshly ground black pepper

Lettuce leaves, for serving

Bring pot of salted water to a boil. Add pasta. Cook until al dente. Drain and rinse pasta under cold water. Drain again. Set aside. Cook peas in water until just tender. Drain and rinse under cold water. Drain again. Set aside. In food processor, puree cottage cheese. Add yogurt and lemon juice; mix well. In large bowl, combine pasta, peas, yogurt mixture and dill. Discard skin from salmon. Beak into chunks, removing any bones; add salmon to mixture. Gently mix. Season with pepper to taste. Line serving plates with lettuce and mound salad on top.

Yield: Serves 4 as main dish.
