CHEF JEFF — ONE BYTE AT A TIME: Buffalo Sliders

Use buffalo meat for this popular entree.

Use buffalo meat, which is much leaner than beef and is also high in iron and B vitamins, for this popular entree.

Buffalo Sliders

1 pound ground buffalo

1 tablespoon minced garlic

1 teaspoon olive oil

1 teaspoon sea salt

1 teaspoon fresh ground pepper

Sliced cheese, if desired

8 minihamburger buns

Preheat grill to medium, about 350 degrees. In large bowl, gently mix ground buffalo, garlic, oil, salt and pepper. Form into balls (about ¼ cup of meat), then flatten each ball into a patty. Cook as you would beef burgers, turning halfway, until internal temperature reaches at least 160 degrees. Keep in mind that ground buffalo is leaner than ground beef and will dry out if cooked too quickly. If desired, top burgers while still on the grill with a slice of your favorite cheese until melted. Buns can be lightly toasted on upper tray of gas grill or over indirect heat on charcoal grill. Serve with your favorite burger toppings.

Yield: Serves 8.
