Soy sauce, ginger and red pepper flakes give pork an undeniable Asian twist.
Ginger Sesame Pork
¼ cup chicken broth
2 tablespoons low-sodium soy sauce
1 tablespoon lemon juice
1 teaspoon sesame oil
¼ teaspoon garlic powder
1/8 teaspoon ground ginger (or 1 teaspoon minced fresh ginger)
1/8 teaspoon crushed red pepper
1 1-pound pork tenderloin
In self-sealing plastic bag, mix broth, soy sauce, lemon juice, oil, garlic powder, ginger and pepper. Add pork. Turn to coat. Seal and refrigerate overnight, turning occasionally. Heat oven to 350 degrees. Remove pork from marinade. Place in roasting pan. Roast about 25 minutes, until meat reaches 155 degrees. Let it rest a few minutes before slicing.
Yield: Serves 4.
