CHEF JEFF — ONE BYTE AT A TIME: Lemonade Chicken

Have you ever had the kind of barbecue chicken that uses lemonade in the sauce? The following may surprise you.

Lemonade Chicken

4 bone-in chicken breasts halves

1 6-ounce can frozen lemonade concentrate

¼ cup low-sodium soy sauce

1 teaspoon salt

2 garlic cloves, peeled

2 teaspoon fresh ginger, peeled and coarsely chopped

1 teaspoon lemon zest

¼ teaspoon paprika

½ teaspoon freshly ground black pepper

Combine lemonade concentrate with soy sauce, salt, garlic, ginger, lemon zest, paprika and black pepper in blender. Blend until smooth. Place chicken in resealable plastic bag. Reserve ½ cup of lemonade mixture for basting. Pour rest over chicken to coat. Marinate chicken at least 1 hour or overnight. Turn occasionally. Preheat grill. Remove chicken from bag. Discard marinade. Place chicken on hot grill. Grill, covered, over medium-high heat for 10 minutes on each side, basting with reserved marinade. Grill until chicken is done.

Yield: Serves 4.
