This beer-cheese bread is a variation of an old standby.

Beer-Cheese Bread

3 cups flour

3 teaspoons baking powder

1 teaspoon salt

2 tablespoons sugar

1 cup shredded Swiss or Cheddar cheese

¼ cup chopped bell or jalapeno pepper or ripe tomato (optional)

1 teaspoon dried basil, sage, Italian seasoning or mustard (optional)

1 12-ounce can beer

2 tablespoons melted butter

Heat oven to 375 degrees. Whisk flour, baking powder, salt and sugar in bowl. Add cheese, pepper and seasoning. Pour beer on top. Mix thoroughly. Pour batter into greased 9-inch metal loaf pan. Drizzle melted butter on top. Bake about 1 hour or until golden brown. Cool for 5 minutes before removing from pan. Serve warm.

Yield: 12 slices.

Approximate nutritional analysis per slice: 190 calories, 5.4 grams fat, 15 milligrams cholesterol, 5.7 grams protein, 27.3 grams carbohydrates, 389 grams fiber, 0.8 milligrams sodium.
