If you’re looking for a simple cake recipe, consider this.
Lemon Loaf Cake
1 cup butter or shortening
3 cups flour
2 cups sugar
2 tablespoons lemon juice
1 cup milk or buttermilk
4 eggs
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
GLAZE:
2 cups confectioners’ sugar
2 tablespoons lemon or orange juice
Beat all cake ingredients together in large bowl for 3 minutes. Bake in greased loaf pan at 325 degrees for 1 hour. Remove. Loosen around edge with knife, but do not remove from pan. Make glaze by mixing confectioners’ sugar with juice. Spoon over cake. Return to oven for 3 minutes. Remove cake from pan and allow to cool.
Yield: Serves 10.
