It’s all right to splurge occasionally, and this sweet onion and cheese dip definitely is an indulgence that is worth trying.
Baked Sweet Onion and Cheese Dip
2 cups shredded Swiss cheese
2 cups chopped Vidalia or other sweet onion
2 cups mayonnaise
2 tablespoons Parmesan cheese
Heat oven to 325 degrees. Stir cheese and onion into mayonnaise. Spoon into a lightly buttered 2-quart baking dish. Sprinkle with Parmesan, and bake, uncovered, 40 to 45 minutes. Serve with crackers.
Yield: Serves 24.
Note: Add a few drops of pepper sauce or stone-ground mustard to kick this up a notch.
