Combined with a sweet onion and honey, rutabagas can be quite delicious.

Rutabagas can have a sharp taste, but combined with a sweet onion and honey, they can be quite delicious.

Rutabagas with Caramelized Onion

6 tablespoons butter, divided

2 medium onions, thinly sliced

About 2 pounds rutabagas

1 teaspoon salt

2 tablespoons honey or maple syrup

Melt half of butter in large, heavy skillet over medium-low heat. Add onions, increase heat to medium. Cook, stirring from time to time, until they are nicely browned. Reduce heat if necessary to keep onions from burning last 5 minutes. Transfer to bowl. Set aside. Peel rutabagas. Cut into ½- to ¾-inch pieces. Place in pot with water to cover, add salt, Boil until tender; drain well. Melt remaining butter in skillet over medium-low heat. Saute rutabagas until slightly crisped. Stir in onions and drizzle with honey.

Yield: Serves 8.

Approximate nutritional analysis per serving: 134 calories, 9 grams fat, 23 milligrams cholesterol, 1.5 grams protein, 14 grams carbohydrates, 3 grams fiber, 402 milligrams sodium.
