Lentils are on some “superfood” lists, and the following chili recipe from Organicville Foods is a smart choice for football fans looking for a Super Bowl entree.
Sweet and Spicy Lentil Chili
1 tablespoon olive oil
1 large onion, chopped
1 red bell pepper, seeded and chopped
2 garlic cloves, minced
2 tablespoons chili powder
1½ cups lentils
15-ounce can crushed tomatoes
12-ounce jar of salsa (Mild, Medium or Pineapple)
½ teaspoon allspice
Cayenne pepper to taste
Salt and pepper
2 cups water
1 cup apple juice
Heat oil in skillet over medium heat. Add onion, bell pepper and garlic; cook until softened. Stir in chili powder.Cook 30 seconds longer. Transfer mix to 4-quart slow cooker. Add lentils, tomatoes, salsa, allspice, season with cayenne, salt and pepper. Stir in water and juice. Cover and cook on low 8 hours. Add more water if chili gets too thick.
Yield: Serves 12.
