Create your own veggie wraps with whatever you have your refrigerator.
Veggie Wraps
2 tablespoons vegetable oil
1 bunch Swiss chard, leaves chopped, plus 3 stems chopped
2 cloves garlic, chopped, or 1 teaspoon jarred minced
½ onion, diced
¼ cup red or white wine
2 teaspoons Italian herb blend
3 cups diced fresh vegetables of your choice
½ cup plain or roasted red pepper hummus
4 flatbreads or large (12-inch) flour tortillas
½ cup low-fat shredded cheese
Heat oil in skillet over medium-high heat; add chard stems, garlic and onion. Cook until soft; lower heat to medium. Stir in wine and Italian seasoning; cook for 1 minute. Add diced veggies; cook until softened. Add chard leaves; cook, stirring, until wilted and warmed. Spread 2 tablespoons of hummus over each os flatbreads. Distribute veggie mixture among tortillas; top each with 2 tablespoons of cheese. Roll up; slice in half.
Yield: Serves 4.
