The following recipe won a Florida woman $50 in the Athens “Make it Fabulous with Fillo” recipe contest that runs through Monday.
The contest, conducted on phyllo.com, offers $12,000 in cash prizes and is interactive with weekly and monthly winners.
Chipotle Shrimp Cups
2 boxes Athens Mini Fillo Shells
1 cup cooked shrimp, peeled and coarsely chopped
½ yellow bell pepper, peeled and diced
½ red bell pepper, peeled and diced
¼ cup fresh cilantro, chopped
1 chipotle pepper in adobo sauce, chopped fine
4 ounces Fontina cheese, grated
Preheat oven to 375 degrees. In large bowl, combine shrimp, peppers, cilantro, chipotle pepper and cheese. Fill each shell with shrimp mixture and bake 7 to 10 minutes or until cheese is melted.
Yield: 30 appetizers.
