CHEF JEFF — ONE BYTE AT A TIME: Skillet Salmon with Dill Cream Sauce

Salmon is a great way to get omega-3 fatty acids and are a very good source of lean protein.

Salmon is a great way to get omega-3 fatty acids, which are known to be heart-healthy. It’s also a very good source of lean protein. The following recipe is not only nutritious but also a quick fix.

Skillet Salmon with Dill Cream Sauce

1 tablespoon canola oil

4 salmon fillets (1 pound total), rinsed and patted dry

1 cup fat-free milk

½ cup reduced-fat cream cheese

½ cup chopped cucumber

2 tablespoons chopped fresh dill or 1 teaspoon dried

In large skillet, heat oil over medium-high heat. Add salmon flesh-side down. Cook 5 minutes. Turn and cook another 3 to 5 minutes or until salmon is cooked through. Remove from skillet; cover to keep warm. Add milk and cream cheese to skillet; cook and stir until smooth. Stir in cucumber and dill. Cook until sauce is heated. Serve salmon topped with cream cheese sauce.

Yield: Serves 4.

Approximate nutritional analysis per serving: 280 calories, 16 grams fat, 5 grams carbohydrates, 26 grams protein, 210 milligrams sodium, 80 milligrams cholesterol, no fiber.
