Here’s a recipe for those of you who are looking for an easy recipe for an appetizer/snack to serve at family gatherings.
Cheese Krispies Cocktail Cookies
¾ cup butter or margarine, softened
9 ounces sharp Cheddar cheese, grated
1½ cups flour
½ teaspoon salt
½ to 1 teaspoon Tabasco sauce
3 cups Rice Krispies cereal
Cream butter and cheese in large bowl of electric mixer for 3 minutes on medium speed. Gradually add flour, salt and Tabasco and beat till well blended. Add the cereal, mixing with a wooden spoon, then kneading by hand.
Heat oven to 400 degrees. Roll dough into 1-inch balls and place on ungreased cookie sheets about ½ inch apart. Use a fork to press each ball down into a ¼-inch thick disk. Bake about 10 minutes. Cool on rack. Cookies store well in sealed tin.
Yield: dozen cookies.
