Don’t wait until Thanksgiving to give this cranberry recipe from Ocean Spray (www.oceanspray.com.) a try.
Citrus Harvest Muffins
1 cup sugar
¼ cup butter or margarine
2 eggs
2 cups flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup Ocean Spray Ruby Tangerine Grapefruit Juice Drink
2 cups Ocean Spray fresh or frozen cranberries, coarsely chopped
Preheat oven to 350 degrees. Grease muffin tins.
Using an electric mixer, beat sugar and butter together in a medium mixing bowl until light and fluffy. Add eggs, one at a time, beating after each.
Combine flour, baking powder and salt in a separate bowl. Add this alternately with the juice drink to the butter mixture. Stir in cranberries.
Spoon into muffin cups, filling ¾ full with batter. Bake 20 minutes or until golden brown.
Yield: 12 muffins.
Approximate nutritional analysis per muffin: 204 calories, 5 grams fat (2.8 grams saturated), 3 grams protein, 36 grams carbohydrates, 46 milligrams cholesterol, 1 gram dietary fiber, 184 milligrams sodium.
