Here’s a hearty breakfast dish that would surely warm up anyone on a cold morning who’s headed for a strenuous day of work.
Sourdough Egg Strata
12 slices lightly buttered extra-sourdough bread
4 cups grated cheddar cheese
½ medium onion, diced
1 cup thinly sliced mushrooms
10 eggs
4 cups milk
2 heaping tablespoons spicy mustard
1 teaspoon salt
¼ teaspoon pepper
Cut bread into small cubes. Place half bread cubes into a large, greased baking dish. Sprinkle with 2 cups cheese, onion and mushrooms. Add second layer of bread and top with remaining cheese.
Beat eggs, milk, mustard, salt and pepper together. Pour mixture evenly over casserole. Cover with foil. Refrigerate overnight.
Preheat oven to 325. Bake for approximately 45 to 50 minutes or until top is golden and lightly crusted.
Yield: Serves 8.
Approximate nutritional analysis per serving: 790 calories, 32 grams fat (16 grams saturated), 335 milligrams cholesterol, 1,800 milligrams sodium, 84 grams carbohydrates, 5 grams fiber, 39 grams protein.
