CHEF JEFF — ONE BYTE AT A TIME: Strawberry and Cream Cheese Sandwich
The following recipe would make a great addition any child’s lunch box.
There is a lot of emphasis on healthy choices these days. Perhaps, the easiest way to get this message across is to start with children.
The following recipe — from and tested by Eating Well magazine — would make a great addition any child’s lunch box and would go a long ways to getting kids on the right track.
Strawberry and Cream Cheese Sandwich
1 tablespoon reduced-fat cream cheese
¼ teaspoon honey
1/8 teaspoon freshly grated orange zest
2 slices very thin whole-wheat sandwich bread
2 medium strawberries, sliced
In a small bowl, combine the cream cheese, honey and orange zest. Spread cream cheese mixture on bread slices. Place sliced strawberries on 1 piece of bread, top with the other.
Note: You can substitute fresh peach, nectarine or apple slices for the strawberries if desired.
Yield: Serves 1.
Approximate nutritional analysis per serving: 128 calories, 4 grams fat (2 grams saturated), 18 grams carbohydrates, 4 grams protein, 191 milligrams sodium, 8 milligrams cholesterol, 3 grams fiber.
