Okra, Tomatoes, and Corn
2 tablespoons butter
1 small onion, finely chopped
1 small Green bell pepper, finely chopped
1 pounds okra, cut in 1-inch slices
2 larges tomatoes, chopped
1 cup corn kernels
½ teaspoon oregano, crumbled
Salt and pepper, to taste
Melt the butter in a pan; add the onion and green bell pepper, and cook over medium heat for 3 to 4 minutes, stirring often. Add the okra slices and cook, stirring often, for 2 minutes. Add the tomatoes, corn, and oregano. Cover and simmer over low heat for 10 minutes. Season with salt and pepper to taste. Serve hot.
Yield: Serves 6.
