Summer is the perfect time to make “impossible pies,” which were created by Bisquick, because all you have to do is stir a batter together and pour it over the ingredients. While it is baking, all the ingredients are bound together so the finished product can be cut into pie-shaped wedges. The bottoms of the pies do become brown and crunchy, reminiscent of pie crust.
Coconut Custard Impossible Pie
½ cup biscuit baking mix, such as Bisquick
½ cup sugar
3 tablespoons butter, at room temperature
½ cup flaked or grated coconut
2 cups milk
Heat oven to 375 degrees. Place ingredients in a blender or food processor and pulse to incorporate thoroughly. Pour into a buttered pie pan and bake 50 minutes.
Yield: Serves 8.
